Food Service Tips

  • Portion size in baked potatoes is key to customer satisfaction.  80-90 count sized portions (uncooked 9-10 ounces) make an attractive, appetizing portion and is just the right size for most appetites.  Larger 50-70 count sized bakers (uncooked 12-16 ounce) are great for higher end steakhouse or signature dishes  (See sizing chart)
  • Russet Burbanks are your best choice for the best tasting, best texture, most culinary satisfying Russet variety of Idaho potatoes.  Less water content is the reason.
  • Number 2 grade potatoes are a great value for fresh fries, mashed potatoes, or any application where the outward appearance of the potato is not an issue for presentation.
  • Storage temperature for potatoes used for fresh fries or hash browns should be no lower than 50 degrees to prevent dark frying color.
