Portion size in baked potatoes is key to customer satisfaction. 80-90
count sized portions (uncooked 9-10 ounces) make an attractive,
appetizing portion and is just the right size for most appetites.
Larger 50-70 count sized bakers (uncooked 12-16 ounce) are great for
higher end steakhouse or signature dishes (See sizing chart)

Russet
Burbanks are your best choice for the best tasting, best texture, most
culinary satisfying Russet variety of Idaho potatoes. Less water
content is the reason.

Number 2
grade potatoes are a great value for fresh fries, mashed potatoes, or
any application where the outward appearance of the potato is not an
issue for presentation.

Storage
temperature for potatoes used for fresh fries or hash browns should be
no lower than 50 degrees to prevent dark frying color.
